I fiddled about with an old Thunderbird add-on before.
It allows to you queue up an email and then send it at a later date, it’s compatible with v3+ (well, it is now) and pretty nifty (press ctrl-shift-enter after writing the email and before clicking send, then you can specify the sending time. Thunderbird must me open though).
